Spinach salad with green beans and radishes

Now, I have never prepared radishes before and tried heat in a pan, but I think they'd be better in the salad raw. ;) But it was still an interesting experiment! Here's the list:

Fresh green beans (cooked in pan with butter, salt, pepper, garlic)
Radishes
Cubed Cheddar Cheese
Blue Cheese
Spinach
Olive Oil and Balsamic Vinegar

The green beans were the best. :) And I liked how adding a heated item to the spinach salad kind of made the salad a little wilty. It was simply delicious. :D

Yummy huevos con espinacas

First, sauteed onions with a little olive oil, then added a bunch of fresh spinach. When the spinach was wilty enough, I added the eggs, some fresh ground sea salt, pepper, and... pecorino romano cheese!! See previous post "Cheese it up" if you're a fan of the pecorino. Then some toasty sourdough bread with butter and sliced tomatoes for their fruityness, color, and presentation points. I also probably had a glass of milk. Lol.

Notice these are basically the same ingredients I've been using the past three meals! Spinach, olive oil, sea salt, pecorino romano cheese, tomatoes, sour dough bread, butter, milk... :) It's simply food!

Cheese it up!!

Spinach salad with fresh tomatoes, pecorino romano cheese, and balsamic vinegar with olive oil dressing. Penne pasta with heated sauce-from-a-jar (sprinkled with pecorino romano cheese). And the piece-de-resistance: sourdough bread put under the broiler with some butter and pecorino romano cheese. MMMMMMM! Topped off with a glass of milk. :) Simply food is simply tasty!

First Supper


For my first dinner on my own, I decided to keep it simple - go figure! Spinach salad with rasberries, blue cheese and balsamic vinegar with olive oil dressing. On the side, I buttered some sourdough bread and had a glass of milk.

It was simply food, and it was SO delicious!

Simply Food

I love simple food. I have been a poor college student for the past two years and have survived with a student dining plan for the 18 months that I have been living on campus. This summer, I am living on my own in Pasadena, CA, with a BLESSED stipend from the internship I am part of, and one of the most EXCITING parts to me is the fact that I can now:

1) Shop for myself
2) Spend absolutely as LONG as I want in the grocery store... just weaving in and out, examining brands, thinking about possible combinations... I don't like feeling rushed.
3) Not worrying too much about the money, yet still wanting to be wise in my fiscal choices.
4) Only buy healthy things because I just can't reconcile myself to buying the other things! (Except a Family Size bag of Cheetos)
5) Come home and COOK for myself
6) Live on simple ingredients combined in myriad ways!

So, here is what I started with:
  • One large bag of fresh Spinach leaves
  • One small container of rasberries
  • Blue Cheese
  • Pecorino Romano cheese
  • Three fresh tomatoes
  • Olive Oil and Balsamic Vinegar (which has LEAD in it??? really??)
  • Organic cereal
  • Chocolate Soy Milk
  • 1 Gallon of 2% milk, yes I will drink it
  • 1 dozen eggs
  • Jar of pre-made spaghetti sauce
  • grindable sea salt
  • 1 pound of real butter
  • Hot Mustard
  • Spinach tortillas
  • Swiss Cheese
  • Deli-sliced ham
  • Sliced hard salami
  • A loaf of San Francisco-style sourdough bread
  • and more... but let's start with this.
